Miss Jill’s Chicken

best christmas pageant everThere’s a story behind this recipe. My son was appearing in a local theater production of The Best Christmas Pageant Ever, and in one of the scenes he had to eat dinner. The director was all set to use a platter of dinner rolls until his diabetes diagnosis (just before the final rehearsals) led everyone to rethink that idea.

Miss Jill, the director, brought a pan of this chicken that she’d made at home–enough for him to have a drumstick during each show. The Kid loves the chicken not only because it tastes great, but because his director cared enough to work around his needs without being asked.
