There’s a story behind this recipe. My son was appearing in a local theater production of The Best Christmas Pageant Ever, and in one of the scenes he had to eat dinner. The director was all set to use a platter of dinner rolls until his diabetes diagnosis (just before the final rehearsals) led everyone to rethink that idea.
Miss Jill, the director, brought a pan of this chicken that she’d made at home–enough for him to have a drumstick during each show. The Kid loves the chicken not only because it tastes great, but because his director cared enough to work around his needs without being asked.
Miss Jill’s Chicken
Per serving:
2 chicken drumsticks
1/4 tsp olive oil
1/4 tsp seasoning salt
Preheat oven to 400. Cover a baking sheet with foil and brush with olive oil. Place drumsticks, skin side up, on pan. Brush with olive oil. Sprinkle seasoning salt on drumsticks. Bake 40 minutes.
