Back when my older son was a toddler and I had about 3 cookbooks to my name, I used to haunt the cooking section of the library and check out 5 cookbooks at a time. My favorites were the ones with cookie recipes. That’s where I got the original recipe for Ranger Cookies.
Unfortunately, I never wrote down the title and author of the cookbook, but over the years, as this cookie has become a family favorite, I’ve tweaked the recipe a bit. The addition of spice was the best idea yet. The Rice Krispies give this cookie plenty of crunch, while the coconut keeps it chewy.
Don’t need 6 dozen cookies? Freeze half the dough for another day!
makes 72 cookies, 10 carbs each
2 sticks butter, softened
1 cup brown sugar, not packed (about 5 ounces)
1 cup white sugar
2 tsp vanilla extract
2 cups flour
1/4 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp nutmeg or mace
2 cups old-fashioned rolled oats
2 cups Rice Krispies cereal
1 cup coconut
Using a stand mixer, cream butter and sugar together, then add eggs and vanilla. Stir in all dry ingredients until combined.
Use a cookie scoop to place cookies on prepared baking sheet (parchment or silpat).
Bake 10 minutes at 400.
Total carb count for this recipe is 720 (adjusted for fiber).
