This chicken dish pairs well with fresh pineapple, broccoli or green beans.
1/2 cup soy sauce
1/4 cup brown sugar, loosely packed
2 cloves garlic, minced (2 to 3)
2 TBL sesame oil
2 TBL sesame seeds
1/4 cup pineapple juice
3 boneless, skinless chicken breasts, cubed
1/2 cup flour
Olive oil for the pan
Flour chicken cubes and saute in olive oil until light brown, cooking in batches if necessary. Mix soy sauce, sugar, garlic, sesame oil, sesame seeds, and pineapple juice. Pour sauce over chicken in skillet. Turn to coat. Heat over high heat until sauce thickens. Serve over rice with pineapple on the side.
