Via Julia Child by way of Amanda’s Cookin’. I’ve “lazied it up” a bit and haven’t noticed any difference in the result.
Simple Marinade for Pork
For each pound of pork (chops, tenderloin or roast):
1 tsp salt
1/8 tsp pepper
3 tbsp lemon juice
3 tbsp olive oil
3 parsley sprigs
1/4 tsp thyme or sage
1 bay leaf
1 clove garlic, minced
Mix marinade ingredients and pour over pork. Marinate at least 3 hours, flipping meat occasionally.
For pork chops: Heat grill pan or outdoor grill to a very high temperature. Remove pork chops from marinade and place on grill. There is no need to add extra oil, as there is plenty in the marinade itself. Cook 3 to 4 minutes per side.
