Today I figured out a better way to “carb out” meals like this.
I poured the bread crumbs I was going to use to bread the chicken into a pie plate. Then I weighed the pie plate, including all the bread crumbs. Next, I breaded one piece of chicken and weighed the pie plate again.
The difference between the two numbers is the amount of bread crumbs on that piece of chicken. I’d cut all the chicken pieces roughly the same size, so I could reasonably estimate that they’d all contain about the same amount of bread crumbs.
