I’m baking these at my son’s request. He wanted chocolate cookies with peanut-butter chips in them. I decided to add some chocolate chips too, because, well, that’s a winning combination.
These fudgy cookies taste almost like a brownie and would be great with any combination of chips, nuts, or dried-fruit add-ins.
Chocolate Fudge Peanut-Butter Chip Cookies
1 cup butter, softened
2 cups sugar
2 eggs
1 t. vanilla
¾ cup cocoa
2 cups flour
1 t. baking soda
½ t. salt
1 cup semi-sweet chocolate morsels
1 cup peanut butter chips
Cream softened butter and sugar in a stand mixer until fluffy. Add in eggs and vanilla and mix well. Add cocoa, flour, baking soda and salt. Stir in chips.
Use a cookie scoop to drop cookies onto prepared baking sheet. Bake 10 minutes at 350. Allow cookies to cool 5 minutes on pan before removing to rack.
