CHICKEN PICCATA BITES
Makes 5 servings
1 pound boneless/skinless chicken breasts, cut into chunks (flat pieces cook more quickly and evenly than thick cubes)
1/2 cup flour
1/4 cup Parmesan cheese
1 TBL salt
1 tsp freshly-ground black pepper
1/4 cup chopped fresh parsley OR 2 tsp dried parsley
2 to 3 TBL extra-virgin olive oil
1/4 cup white wine
3 TBL butter
2 TBL lemon juice
2 tsp minced garlic
Combine flour, cheese, salt, pepper and parsley in a bowl. Coat chicken pieces in the flour mixture. Saute in olive oil. If necessary, saute the chicken in smaller batches and just keep the cooked chicken warm until the next step.
When all the chicken is cooked, remove it from the pan. Make a sauce with white wine, butter, lemon juice and garlic. Return chicken to pan and stir to coat with the sauce.
