This is one of my favorite side dishes. Just hand me a bowl and spoon; I don’t even need the rest of the meal.
Orzo with Garlic, Onions and Thyme
Serves 4
1 small onion, chopped fine
2 tsp minced garlic
2 tbl olive oil
2 cups chicken broth
1/2 tsp dried thyme
6 oz orzo pasta
2 oz Parmesan cheese
Saute the onion and garlic in the olive oil. When everything is soft, add the broth and thyme. Bring to a boil. Add orzo, bring to a boil, then turn down to simmer and cover. Simmer 20 minutes. Stir in cheese and serve immediately.
