This marinated steak is great on the grill. Double the marinade and make a second steak to use in wraps, sandwiches or salads for a quick lunch or light dinner on another day! You can also use “planned leftovers” in fajitas by heating the sliced steak quickly with the vegetables after vegetables are nearly cooked.
Asian Marinated Steak
Makes 6 servings
2 lb. London broil
1/4 cup soy sauce
1/4 cup rice wine vinegar
1 TBL lime juice
1 TBL Worcestershire sauce
2 tsp ground ginger
3 cloves garlic, minced
1 TBL sesame oil
1 tsp black pepper
Place steak in a ziplock bag or shallow baking dish. Combine remaining ingredients and marinate 6 hours or more. Grill steak to desired doneness, discarding remaining marinade. Allow to rest 10 minutes. Slice thinly and serve.
MARINATING TIP: get a head start by mixing up the marinade and pouring it into a freezer bag with the steak. Freeze steak in the marinade until the day you want to grill it. OR pour marinade into bag of frozen steak and allow it to marinate as it thaws.
