Sloppy Joes are a fun and filling meal–and they’re quick to make. Next time you brown ground beef for tacos, brown an extra pound and freeze it so you’ll be a step ahead of the game. With precooked ground beef, these come together in under 15 minutes. You can get this cooked during halftime and be ready to eat during the third quarter. To keep this meal extra simple, we complete it with a green salad, bell pepper strips, and baby carrots.
Sloppy Joes
Makes 8 sandwiches
1 lb. ground beef, browned and drained
2 TBL olive oil
1 cup onion, finely chopped
1 1/2 TBL minced garlic
1 cup bell peppers, finely chopped (choose your favorite color or mix them up!)
1 cup frozen corn, thawed
2 cups tomato sauce
2 tsp chili powder
Sauté onions in garlic oil until they begin to soften. Add peppers and garlic and cook until vegetables are tender. Stir in remaining ingredients. Cover and simmer 5 minutes. Serve on hamburger buns or over baked potatoes or pasta.
