Roasted Vegetables with Apples

This combination of vegetables and apples will have your house smelling like Thanksgiving–and it’s great any day of the year. It makes an easy and healthy side dish.

Makes 4 servings

1 pound sweet potatoes (yams)
1/2 pound baby carrots
1 pound onions
2 TBL olive oil
1 tsp dried rosemary
1/2 tsp black pepper
1/2 tsp kosher salt
1/2 pound apples
1 TBL olive oil

Preheat oven to 450. Cover baking sheet with heavy foil and place in oven while it preheats. Meanwhile, peel sweet potatoes and cut into 2-inch pieces. Peel onions and slice, then separate layers. Stir sweet potatoes, carrots, onions, 2 TBL olive oil and seasonings together.

Place vegetables on heated baking sheet. Place in oven for 10 minutes.

Peel and slice apples. Toss with 1 TBL olive oil. Remove vegetables from oven after 10 minutes, turn over, and add apples. Return to oven and roast 10 minutes more.
