The best summer salads are quick to put together, without a complicated list of ingredients. Next time you make tortellini for dinner, cook extra and save the rest for this easy salad that’s a lunch in itself or a simple dinner side. This is also a good way to use up leftovers!
Simple Tortellini Salad
Makes 4 side-dish servings
2 cups cooked cheese tortellini, chilled
1/3 cup grape tomatoes
1/8 cup red onion
3 oz (about 1/3 cup) Italian salad dressing
Cut grape tomatoes in quarters.
Add all ingredients to salad bowl and gently toss until coated.
Chill at least 30 minutes before serving.
