Cod with Mustard and Panko

Codfish steaks are perfect for this dish: they’re firm and uniformly thick. This recipe makes a single serving and goes with just about any side dish you like! Try different varieties of mustard or use roasted-garlic breadcrumbs in place of the panko to change up the flavor.

Cod with Mustard and Panko

For each serving:

5 oz. codfish steak
1 tsp olive oil
1/2 tbsp Dijon mustard
1 tbsp panko
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp parsley

Preheat oven to 400°.

Brush both sides of codfish steak with olive oil and place in glass baking dish or pie pan.

Spread mustard on top of fish. Sprinkle with panko, salt, pepper and parsley.

Bake 12-15 minutes or until fish flakes easily with a fork.
