Plenty of fresh garlic and sweet Vidalia onion complement spicy Italian sausage in this dish. It comes together in just over 30 minutes! Enjoy this thick pasta sauce over sturdy pasta: we like it with cheese ravioli, but it goes well with rigatoni or fettuccine as well.
This would make an excellent layer of lasagna filling, too!
Sweet Onion, Sausage and Garlic Pasta Sauce
Makes 6 servings
1/2 lb. loose Italian sausage (sweet or spicy)
8 oz. sweet onion
10 garlic cloves
1/2 tsp crushed red pepper
1 tsp oregano
1 tsp basil
1 tsp parsley
1/2 tsp salt
2 oz red wine
28 oz crushed tomatoes
Brown Italian sausage in a large skillet. Scoop out cooked sausage with a slotted spoon. In the sausage drippings, cook onion until it softens. Add garlic and spices, stirring until fragrant. Stir in red wine, then add crushed tomatoes and cook 15 minutes while you get the pasta ready.
