This is a super-fast meal that tastes like you cooked it far longer. Serve this beef in a bowl with steamed brown rice and your favorite vegetable. We recommend roasted broccoli or sesame green beans.
Korean Style Beef and Rice Bowls
Makes 4 servings
1 lb. ground beef
¼ cup onion, finely chopped
¼ tsp crushed red pepper, or to taste
½ tsp ground ginger
3 garlic cloves, minced
¼ cup reduced-sodium soy sauce
¼ cup brown sugar
2 tsp sesame oil
2 TBL sesame seeds
Brown ground beef and onion until cooked through. Drain or blot excess grease from pan.
Stir in crushed red pepper, ginger, and garlic. Sauté until garlic is cooked.
Combine sauce ingredients and pour over beef mixture. Quickly bring to a boil, stirring often, then remove from heat.
Leftover meat can be frozen; add a small amount of soy sauce before reheating in microwave.
