Sunshine Citrus Tilapia Roll-Ups

I jumped at the chance to sample Sunshine State of Mind, a new craft BBQ rub from While I’m the last person you’ll find cooking at a grill, I always enjoy trying new spices and blends and finding creative ways to use them.

Sunshine Citrus Tilapia Roll-Ups

Makes 4 servings

4 5-oz tilapia fillets (or your favorite mild white fish)
1 tbsp butter, divided in 8 pieces
1 lemon or lime
1 tsp Sunshine State of Mind All Purpose Craft BBQ Rub (or your favorite lemon pepper blend)

Line a baking pan with foil and spray with nonstick baking spray. Preheat oven to 350.

Cut fish fillets in half up the center so you have two long strips for each fillet. Roll the strips and secure with toothpicks. Stand them on end on the baking sheet.

Place one piece of butter inside each roll-up. After all the fish is rolled up, squeeze fresh lemon or lime juice over the 8 rolls. Sprinkle with Sunshine State of Mind All Purpose Craft BBQ Rub.

Bake 10 minutes or until fish is done.

Here’s more about Sunshine State of Mind All Purpose Craft BBQ Rub. This spice blend is terrific for more than just barbecue. So far we’ve tried it on chicken thighs (paired with my homemade pineapple barbecue sauce) and roasted vegetables besides the fish. I’m planning to put it on shrimp for tacos, too! It’s a delicious citrusy, spicy (but not too spicy) blend that gives a punch of flavor to your food.

(If I’m going to be a hand model I probably should get a better manicure.)

There is nutrition info on this label (not shown) but there’s also a Bible bonus. John 3:16 is right there on every label.
