Cookie Time: Spicy Pecan Ranger Cookies

This is one of those recipes that invites endless variations. I’d thought about adding nuts, and then when I only had half the coconut needed for the recipe, I figured I could use chopped pecans to fill in the space. We are fans of this chewy cookie that has a bit of extra crunch from the Rice Krispies.

Spicy Pecan Ranger Cookies

Makes 72 cookies

2 sticks butter, softened
1 cup brown sugar, not packed (about 5 ounces)
1 cup white sugar
2 eggs
2 tsp vanilla extract
2 cups flour
1/4 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp nutmeg or mace
2 cups old-fashioned rolled oats
2 cups Rice Krispies cereal
1/2 cup coconut
1/2 cup chopped pecans

Using a stand mixer, cream butter and sugar together, then add eggs and vanilla. Stir in all dry ingredients until combined.

Use a cookie scoop to place cookies on prepared baking sheet (parchment or silpat).

Bake 10 minutes at 400.

VARIATION:
Skip the coconut, double the pecans. Yield: 57 cookies when using a generous cookie scoop.
