Good Morning Breakfast Rice

This is a delicious and healthy way to start your day AND use up that leftover rice from dinner. It works equally well with brown or white rice. It’s like rice pudding without the hassle of separating eggs, baking, and all of that! Best of all, it’s ready in about 10 minutes.

The nutrition information for this recipe is for the basic rice, without any mix-ins such as nuts or dried fruit.

Good Morning Breakfast Rice

Makes 3 servings

1 cup cooked white rice (see note)
1 cup milk
3 TBL brown sugar
1 1/2 tsp spice (I use my Coffee Cup Spice blend in this, but you can use cinnamon or any baking-spice blend you like)
Optional: 3 TBL mix-ins (nuts, raisins or other dried fruit)

Combine all ingredients in a pot, stir and cook over low heat, stirring occasionally until the milk bubbles up and is pretty much absorbed by the rice. This takes under 10 minutes. Allow to sit 2 more minutes before serving.

Note: Brown rice may also be used in this dish. Nutrition information was calculated using white rice and may vary depending on the type of rice used.)
