Walnut Spice Cake

This walnut cake has a delicate flavor. It can be served with or without the brown-sugar frosting.

Walnut Spice Cake

2 cups flour
2 tsp baking soda
1/8 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp pumpkin pie spice
pinch of salt
3 tbl butter, at room temperature
3/4 cup sugar
1/4 cup brown sugar
2 eggs
1 cup milk
1/2 cup chopped walnuts
6 to 8 perfect walnut halves (for garnish)

Combine flour, baking soda and spices. Set aside.

Cream together butter and sugars in mixing bowl. Add eggs, beating in one at a time. Alternately, add milk and flour mixture. When beaten well, stir in the chopped walnuts.

Pour batter into prepared loaf pan. If you will not be icing the cake, top with the perfect walnut halves now, and bake at 350 for 45 to 60 minutes or until it passes the toothpick test. If it starts to get too brown, “tent” the top of the cake with foil until it is done baking.

If you will be frosting the cake, save the walnut halves to top the frosting.

BROWN SUGAR FROSTNG
2 tbl butter
¼ cup brown sugar
1 tbl milk
½ cup + 1/3 cup powdered sugar

Melt butter in small saucepan. Add brown sugar and stir until bubbly. Remove from heat. Add milk and stir until smooth. Add powdered sugar and beat until frosting is ready to spread. Use IMMEDIATELY.
