Lemon-Butter Flounder

Delicious fish doesn’t need to be complicated or take a long time to prepare. Sometimes the simple recipes are the best ones! This lemon-butter flounder will pair well with just about any vegetable you like.

Lemon-Butter Flounder

Makes 4 servings

Ingredients:

4 flounder fillets, about 5 oz. each
1/2 cup flour
1 tsp lemon pepper seasoning
Olive oil for the pan
3 tbsp butter
1 tbsp fresh lemon juice
1 tbsp dried parsley flakes (or 2 tbsp chopped fresh parsley)
1/2 tbsp dried tarragon (or 1 tbsp fresh tarragon)
Lemon slices (for garnish)

Directions:

Pat fish fillets dry with paper towels.
Mix flour and lemon pepper in a bowl. Dredge fish in flour mixture.
Heat a heavy skillet over high heat. Turn down to medium and add oil. Add fish to pan (cook in batches if necessary—don’t crowd the pan.) Cook about 2 minutes per side or until golden brown. Remove to a warm plate.
In the same pan, melt the butter and allow it to turn brown (don’t burn it!), then add lemon juice.
Plate fish, then drizzle the pan sauce over the fillets and sprinkle with parsley and tarragon. Garnish with lemon slices.
