SUMMER CUCUMBER SALAD
1 medium cucumber (4 1/2 ounces)
red onion (1 ounce)
Plum tomatoes (6 ounces)
2 TBL apple cider vinegar
1 TBL extra-virgin olive oil
salt and pepper to taste
Peel cucumber. Slice it down the center and scoop out the seeds, then slice cucumber into chunks.
I have my sous-chef use a melon baller to seed the cucumbers. This technique works really well.
Dice tomatoes and slice onion into very thin strips.
Combine cucumber, tomatoes and onions in serving bowl.
Mix cider vinegar and oil with salt and pepper. Toss with vegetables.
