This is a very light-tasting, low-carb way to serve chicken, and there’s minimal prep work involved. Add some baked potatoes and steamed vegetables and dinner is done! You can use this technique with skin-on chicken breasts or drumsticks by adjusting the baking time.
Lemon & Garlic Chicken Thighs
Serves 4
4 chicken thighs (about 7 oz. each), bone-in, skin-on
1/2 tsp. salt
2 tsp. rosemary leaves
Dash of black pepper
1 tsp. lemon rind
1/3 c. lemon juice
Preheat oven to 400. Cover a cookie sheet with foil and spray with baking spray or brush a bit of olive oil on the bottom of a glass or ceramic baking dish.
Place chicken on prepared baking surface. Pour lemon juice over chicken. Mix remaining ingredients and spread over chicken.
Bake 40-45 minutes or until juices run clear.
